Omakase Experience by Prime Fish takes guests on a journey through the mind of Chef Robin as he creates a symphony of delicate seafood dishes. Inspired by Japanese customs, Omakase means "leave it up to the Chef" or "trust the Chef," and Chef Robin will provide the very best in sushi through his curated, seasonal sushi tasting menu.
Chef Robin chooses the highest quality of fish imported directly from Toyosu Fish Market in Tokyo, Japan and prepares all of his dishes in front of guests. Chef Robin is known for his extensive knowledge of sake, and he will recommend the perfect sake to pair with each course. By taking an exclusive seat at the table, we welcome you to enjoy some of the finest sake and watch the precision and detail that Chef Robin puts into all of his mouth-watering courses.

Meet Chef Robin Anthony
A 2026 James Beard semifinalist for Best Chef: Southeast, Robin Anthony has quietly built one of the most compelling sushi destinations in the American South with his Prime Fish empire.
When the Michelin Guide published its first South edition in 2025, Prime Fish and Omakase Experience by Prime Fish were the only sushi restaurants in the Carolinas recognized — reflecting what Anthony has built, and what he long believed Charlotte deserved.
Born near Bali, Anthony immigrated to the U.S. in 2013, settling in Charlotte after time behind Raleigh's sushi counters. Self-taught, he honed his Japanese technique and Edomae tradition through disciplined practice and dining at Michelin-starred tables nationwide.
Finding a regional scene dominated by fusion, he built something rarer. Prime Fish opened in 2021 to immediate acclaim, sourcing premium fish from markets in Japan, Spain, and Denmark. In 2022, he added Omakase Experience by Prime Fish — an intimate six-seat counter with fish flown from Tokyo's Toyosu market and 10 to 15 course tasting menus — followed in 2025 by Prime Fish Cellar, a sushi and wine/sake bar bringing the same sourcing philosophy to a casual setting.

How can I book the omakase experience?
Reservations can be made using our booking application

After 72 hrs before seating, online reservations will be cut off. Reservations made under 72hrs please contact the restaurant.
What is your cancellation policy?
Cancellations made less than 7 DAYS before reservation time are not refundable. Cancellations made less than 7 days in advance are not refundable

How long does a seating last?
A typical seating will last about 2 hours.
What happens if I arrive late?
We cannot guarantee the full menu to guests who are more than 10 minutes late.
Is there a corkage fee?
Yes, we charge $100 per bottle or $200 per magnum, for a maximum of two bottles per party. Every additional bottle past the initial two will be charged at a rate of $200 per bottle, or $300 per magnum.
Please make sure to consult with the restaurant (call/email) prior to bringing bottles, as any wine/sake that is on the list can not be accepted as corkage.
Do you accommodate dietary restrictions?
Due to high demand and limited space, we will not be able to accommodate for allergies or any dietary restrictions.
Can I wear perfume/cologne?
We ask that guests limit the amount of perfume they wear, so as not to interfere with the experience of other guests. Please be conscious of the amount of perfume or cologne you apply before your meal.
